Delicious Tofu Rice Pancakes Recipe

Serving Size: 8-12
The Ingredients
1¼ of Rice Flour
Nasoya Organic Extra-Firm Tofu (14 oz)
1 of Ginger
½ of Vanilla Extract
4 Brown Organic Eggs
2 tablespoon of coconut sugar
**Optional** 500mL of your choice of milk
Instructions
In a large bowl, mix the eggs, vanilla, milk (optional), and tofu together, until the batter is smooth and thick
In a separate bowl mix together the dry ingredients (ginger, rice flour, and coconut sugar)
Slowly add the tofu mix to the dry ingredients and mix well, until the batter is thick
Heat a large frying pan, and pour a small amount of vegetable oil
Using a ¼ measuring cup pour the pancake batter onto the frying pan
They should need about 1-2 minutes on each side to cook fully
Serve with your choice of syrup and fruits
